Double Chocolate Chip Brownies


In order to satisfy my wife’s sweet tooth, I am constantly looking for a low-carb alternative to dessert.

This recipe is one of the best.

Grain free. Gluten free. Sugar free. Low glyceic index.

And tastes GREAT.

¼ cup (½ stick) unsalted butter

¼ cup coconut oil

1 cup coconut palm sugar

½ cup unsweetened cocoa powder

¼ teaspoon salt

2 large eggs

1 teaspoon vanilla extract

½ cup almond flour

¼ teaspoon baking powder

½ cup dark chocolate chips


Preheat the oven to 350°F/180°C/Gas 4. Combine the butter, coconut oil, coconut palm sugar, cocoa powder, and salt in a saucepan. Simmer over medium to low heat, stirring occasionally, until it forms a smooth mixture and feels hot to the touch. Remove from heat and set aside to cool slightly.

After a few minutes, whisk in the eggs one at a time, stirring for a minute after each addition. Spoon in the vanilla, almond flour, baking powder, and chocolate chips, and stir until well combined.

Grease a 9” x 9” baking pan and evenly pour in batter. Bake for 20 minutes, or until barely set – don’t overcook. Allow to cool, cut into squares. Serve and enjoy.

    • There is some controversy with regards to coconut palm sugar. Although is has a LOWER glycemic index, there is still a potential for a spike in blood sugar. Use it sparingly, and see how you react. I am able to add it to food without any significant side effects.

  1. now this one is really good. My sister-in-law made these together. We are both working hard on the weight thing !! Being in your 70’s sometimes makes it hard, but don’t give up. We both got great reports on our check-up’s !! As of today we are both off soda’s ( just water) sugar and bread. I guess for me bread has been the hardest. Good luck everyone !!
