I wish I had a nickle for every person who tells me that eating low carb is difficult. There are so many ways to prepare easy, satisfying, healthy, and simple dishes.
This is an example of what I will be feasting on this evening with my family. Along with a London Broil.

1 head of cauliflower
1 stick of butter (I used grass-fed Kerrygold garlic and herb)
Steam cauliflower. When cooled and drained, add to food processor with butter, salt, garlic and any other seasoning of your choice. Blend until creamy. Store in refrigerator until ready. Microwave and enjoy!
