1/4 cup macadamin nuts
1/4 fresh cilantro leaves
4 TBLS Butter, at room temp, divided
1 teaspoon grated lemon rind
1 2 1/2 # salmon fillet
salt & pepper
1 TBLS fresh lemon juice
1) Heat oven to 450 F. In food processor, process mac. nuts & cilantro until finely chopped; add 3 TBLS butter and lemon rind; pulse til combined.
2) grease jellyrool pan with remaining butter. Place salmon in pan, flesh side up, Season w/ salt & pepper. Rub macadamin nut/clinatro mixture/butter over fish.
3) Roast 12-15 minutes for med-rare. Drizzle w/ lemon juice on platter.
Use wild caught salmon.
