Cream Cheese Bites

We are all addicted to sugar. It is a powerful addiction and many in the medical field think the urge is as strong as cocaine and methamphetamine. The only way to eliminate the cravings are to cut out sugar as much as possible and substitute for something else sweet.

The way we measure blood glucose effect by food is by using the glycemic index (GI). Pure sugar has a GI of 100 so the lower the better. The best sugar substitute is Truvia or stevia. It has very little effect on blood sugar elevation, hence the insulin level remains low. Erythritol (GI = 0)and Xylitol (GI = 7) are also good to substitutes.

Patty and I both have a sweet tooth and I found this recipe several months ago that does the trick. For an added benefit, you can add nuts or dark chocolate chips.

  1. 8 oz cream cheese
  2. 8 TBS grass-fed unsalted butter
  3. 3/4 cup truvia
  4. 1 TBS vanilla flavor
  5. (for chocolate poo, add 1/4 cup cocoa powder)

Blend with a hand blender, place in a baggie or cake decorating bag and place small amount on wax paper lined plate to freeze. I used a silicone tray. This batch makes 24 large ones or LOTS of smaller ones. The size of your poo is up to you! If there are 24, each bite has 1 net carb. ENJOY.
